Beet & Walnut Salad
Serves 4
Ingredients
- 3-4 small beets, peeled
- Salt and pepper to taste
- 1/2 of a lemon
- Olive oil
- Balsamic vinegar
- 1/2 cup walnuts, crushed or chopped
- 2 cups of arugula (optional)
- 1/2 cup (3.5 oz) feta cheese (optional)
Directions
- Wash, peel, and cut the beets into small, square chunks.
- Once cut, put the beets in a separate bowl and sprinkle with the lemon.
- Add salt and pepper to taste. Mix well.
- Sprinkle the mixture with walnuts.
- Optional: Add the arugula and feta cheese.
