Recipe: Raw, No-bake Energy Bars

Ingredients

  • Raw Cashews – 2 cups
  • Dried Goji Berries – 1 tablespoon
  • Medjool Dates – 10 medium-sized, pitted & chopped
  • Raw Sunflower Seeds – 1/4 cup
  • Cinnamon – 1/2 teaspoon
  • Honey – 1 teaspoon

Instructions

  1. Pulse cashews in food processor until texture is coarse and crumbly
  2. Add dates, pulse until consistent throughout mixture
  3. Add Goji berries, sunflower seeds, and cinnamon, pulsing until well-mixed
  4. Spread mixture evenly in a 6-inch baking dish
  5. If desired, drizzle with honey
  6. Place in fridge for one hour
  7. Cut however you’d like and enjoy!

No-bake Energy BarsVariations

Substitute any other nut for cashews
Use cranberries or raisins instead of goji berries
Substitute dates for figs
Dark chocolate chips can replace sunflower seeds
