Carrot Bread
Ingredients
- 2 cups grated carrots
- 1 cup unsweetened applesauce
- 2 large eggs
- 1/4 cup vegetable or olive oil
- 1/3 cup honey or maple syrup
- 2 teaspoon vanilla extract
- 2 teaspoon orange zest
- 2 cups rolled oats, finely blended
- 1 1/2 teaspoon baking powder
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 1/2 teaspoon ground cinnamon
- 1/2 teaspoon ground ginger
- 1/4 ground nutmeg
- 1/2 cup chopped walnuts
Directions
- Preheat oven to 350°F and prepare a loaf pan with parchment paper or oil.
- In a large bowl, combine carrot, applesauce, eggs, oil, honey, vanilla, and orange zest.
- In a small bowl, whisk together oat flour, baking powder, baking soda, salt, cinnamon, ginger, and nutmeg. Add the wet ingredients and mix until just combined.
- Add the walnuts, reserving some for topping.
- Pour batter into the prepared pan and sprinkle walnuts.
- Bake for 50-55 minutes until golden brown and a toothpick comes out clean.
- Cool for at least 30 minutes before slicing.
- Once completely cooled, store in the fridge for 4-5 days or freeze for up to a month.
