Carrot Bread

Ingredients

  • 2 cups grated carrots
  • 1 cup unsweetened applesauce
  • 2 large eggs
  • 1/4 cup vegetable or olive oil
  • 1/3 cup honey or maple syrup
  • 2 teaspoon vanilla extract
  • 2 teaspoon orange zest
  • 2 cups rolled oats, finely blended
  • 1 1/2 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon ground ginger
  • 1/4 ground nutmeg
  • 1/2 cup chopped walnuts

Directions

  1.  Preheat oven to 350°F and prepare a loaf pan with parchment paper or oil. 
  2. In a large bowl, combine carrot, applesauce, eggs, oil, honey, vanilla, and orange zest.
  3. In a small bowl, whisk together oat flour, baking powder, baking soda, salt, cinnamon, ginger, and nutmeg. Add the wet ingredients and mix until just combined. 
  4. Add the walnuts, reserving some for topping.
  5. Pour batter into the prepared pan and sprinkle walnuts.
  6. Bake for 50-55 minutes until golden brown and a toothpick comes out clean.
  7. Cool for at least 30 minutes before slicing.
  8. Once completely cooled, store in the fridge for 4-5 days or freeze for up to a month.
