Serves 4

 

Ingredients:

  • 2 c. quinoa
  • 4 c. liquid (water, vegetable stock, or chicken stock)
  • 1 c. small dice (1/4”) green bell pepper
  • 1 c. small dice (1/4”) carrots
  • 1 c. sliced mushrooms
  • 1 bunch chopped green onions
  • 1 tsp. minced garlic
  • 1 tsp. minced ginger
  • 2 tbsp. soy sauce
  • 2 tbsp. sesame oil

Instructions:

  1. To cook the quinoa, bring 4 cups of stock to a boil in a medium sized pot. Add quinoa and turn the heat down to a simmer.
  2. Cover and cook until the liquid is absorbed, about 10 minutes
  3. Fluff quinoa with fork, cover, and let sit for 5-10 minutes
  4. Heat sauté pan over medium heat for 1 minute and add sesame oil
  5. Add garlic and ginger and sauté for 1 minute, do not allow to brown -- turn heat down if necessary
  6. Add carrots and sauté for 1 minute, then add mushrooms and bell pepper
  7. When vegetables are cooked to your liking, add quinoa and soy sauce to the sauté pan and stir 
  8. Garnish with green onion
