Enjoy this delicious main dish that is packed with protein and fiber using some staple kitchen items and turkey burger patties.

Moroccan Garbanzo Stew

Ingredients

  • 2 cups cooked garbanzo beans, drained
  • 2 turkey burger patties
  • 2 fresh tomatoes, diced (or 1/2 cup canned tomatoes)
  • 2 teaspoons olive oil
  • 1/4 cup onion, finely diced
  • 2 cloves garlic, finely minced
  • 1/2 teaspoon paprika
  • 1/2 teaspoon cumin
  • 1/2 teaspoon curry powder (or spice blend of choice)
  • Chopped cilantro or kale (for garnish)
  • Salt and pepper, to taste

Directions

  1. Place dry garbanzo beans in a slow cooker. Cover them with water and cook on low for 8 to 10 hours, or on high for 5 to 7 hours. 
  2. Once cooked, drain garbanzo beans.
  3. Cook the turkey burger patties in 1 teaspoon of olive oil on an electric skillet.
  4. Once the turkey is cooked, set aside.
  5. In a skillet, sauté the onions and garlic in 1 teaspoon of olive oil until the onions are translucent and the garlic is fragrant. 
  6. Add spice blend of choice and cook until fragrant.
  7. Add the garbanzo beans, chopped tomatoes, and approximately 1/2 cup of water to the mix.
  8. Let it simmer for 10-15 minutes until the sauce thickens.
  9. Season the mix with salt and pepper to taste.
  10. Crumble the cooked turkey patties and then add them to the garbanzo stew. Mix and heat them thoroughly.
  11. Garnish the dish with cilantro/kale. This dish is excellent when served with brown rice!
