Enjoy this delicious main dish that is packed with protein and fiber using some staple kitchen items and turkey burger patties.
Moroccan Garbanzo Stew
Ingredients
- 2 cups cooked garbanzo beans, drained
- 2 turkey burger patties
- 2 fresh tomatoes, diced (or 1/2 cup canned tomatoes)
- 2 teaspoons olive oil
- 1/4 cup onion, finely diced
- 2 cloves garlic, finely minced
- 1/2 teaspoon paprika
- 1/2 teaspoon cumin
- 1/2 teaspoon curry powder (or spice blend of choice)
- Chopped cilantro or kale (for garnish)
- Salt and pepper, to taste
Directions
- Place dry garbanzo beans in a slow cooker. Cover them with water and cook on low for 8 to 10 hours, or on high for 5 to 7 hours.
- Once cooked, drain garbanzo beans.
- Cook the turkey burger patties in 1 teaspoon of olive oil on an electric skillet.
- Once the turkey is cooked, set aside.
- In a skillet, sauté the onions and garlic in 1 teaspoon of olive oil until the onions are translucent and the garlic is fragrant.
- Add spice blend of choice and cook until fragrant.
- Add the garbanzo beans, chopped tomatoes, and approximately 1/2 cup of water to the mix.
- Let it simmer for 10-15 minutes until the sauce thickens.
- Season the mix with salt and pepper to taste.
- Crumble the cooked turkey patties and then add them to the garbanzo stew. Mix and heat them thoroughly.
- Garnish the dish with cilantro/kale. This dish is excellent when served with brown rice!
