Spicy Garbanzo and Celery with Caramelized Onions
Ingredients
- 1.5 cups fresh cooked garbanzo beans (or a 15 ounce can), drained and rinsed
- 1 cup finely chopped onions
- 3 stalks celery, chopped
- 2 tablespoon butter or oil of your choice
- 1 teaspoon coriander
- 1/2 teaspoon cumin
- 1/8 teaspoon tumeric
- 1/8 teaspoon red pepper or paprika
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper, coarsley ground
- 1-2 teaspoon fresh lemon juice
Directions
- Add oil or butter in a large fry pan over medium heat.
- Add onions and slowly cook until they are light brown (about 20 to 25 minutes).
- Add coriander, cumin, tumeric, and red pepper. Stir and continue to cook for 1-2 minutes to develop their flavors.
- Add garbanzo beans, celery, salt, black pepper, and a tablespoon of water to the mix.
- Stir the mixture until the beans are thoroughly coated with it.
