Spicy Garbanzo and Celery with Caramelized Onions

Ingredients

  • 1.5 cups fresh cooked garbanzo beans (or a 15 ounce can), drained and rinsed
  • 1 cup finely chopped onions
  • 3 stalks celery, chopped
  • 2 tablespoon butter or oil of your choice
  • 1 teaspoon coriander
  • 1/2 teaspoon cumin
  • 1/8 teaspoon tumeric
  • 1/8 teaspoon red pepper or paprika
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper, coarsley ground
  • 1-2 teaspoon fresh lemon juice

Directions

  1. Add oil or butter in a large fry pan over medium heat.
  2. Add onions and slowly cook until they are light brown (about 20 to 25 minutes).
  3. Add coriander, cumin, tumeric, and red pepper. Stir and continue to cook for 1-2 minutes to develop their flavors.
  4. Add garbanzo beans, celery, salt, black pepper, and a tablespoon of water to the mix.
  5.  Stir the mixture until the beans are thoroughly coated with it.
